Located on La Reserve within Levanto Building, Makati’s newest premium dining destination, Brontë presents an elevated take on Australian dining brought by chef Wade Watsons, whose understated approach brings together premium ingredients and polished cooking with a wine collection perfect for memorable life moments.&nbsp;
For Watsons, the restaurant’s philosophy rests on three principles: “quality, refined, and simplistic.” While the combination may sound contradictory, the chef sees that this tension is precisely how a restaurant makes its mark. “The best restaurants in the world, in my opinion, are the ones that are simple. They're serving food you want to eat,” he shared. Putting it more simply, partner and actor Derek Ramsey said, “Quality is number one. And different. And delicious.”&nbsp;

Carrying this ethos into the space, Brontë’s interiors blend Watson’s Australian heritage with the cosmopolitan energy of Makati. The name itself was inspired by Sydney’s Bondi Beach, when his partner Hannah suggested “Brontë,” to which he replied, “Yeah, that works!” The same laid-back spirit comes through the earthy tones, cane-woven chairs, thoroughly placed yuccas, and terracotta upholstery, while floor-to-ceiling windows open to views of the city’s skyline — resulting in a space that captures the ease of Bondi with the urban sensibility of Makati.&nbsp;&nbsp;

Brontë’s menu leans into its steakhouse identity, coming through in a menu that focuses on premium Australian and American produce. Setting the tone, starters range from freshly shucked oysters and Tasmanian Salmon Crudo to Foie Gras Terrine and Wagyu Beef Tacos. This is followed by the ‘Main Event,’ which is the core of the experience, featuring the Carrara Wagyu Ribeye, Snake River Farms Gold Label Striploin, Côte de Boeuf Carrara Bone-In, and Brontë Grand Porterhouse.

Watson also believes that cooking a great steak does not end at the grill, as he is also particular when it comes to resting larger cuts. For the chef, steaks weighing more than 500 grams may rest for up to an hour before serving to retain their succulence and tenderness.

The menu also extends beyond its steak with its signature plates, including the Australian Lamb Chops, Boston Lobster Risotto, and Duck Breast, alongside seafood highlights like the Barramundi Meunière and Angel Hair Pasta with Manila Clams and Tiger Prawns. Capping off the meal with dessert, Brontë pairs Australian classics and Filipino influences for its delectable plates, from Pavlova and Sticky Toffee Pudding to Crème Brûlée Flan.

And of course, a good meal is never complete without an equally considered pour — at Brontë, the wine program reflects the restaurant’s commitment to quality. Housed at ‘The Vault,’ the restaurant’s extensive cellar spans celebratory bottles to rare prestige cuvées, which includes Dom Pérignon P2 Plenitude Brut 2008, Krug Grande Cuvée 172ème Édition, Cristal Brut Rosé 2002, Château Haut-Brion and Sassicaia Tenuta San Guido Bolgheri 1997. Built over the years with the hope of eventually sharing them at the table, Watson’s collection of iconic bottles brings an added sense of occasion and personal history to the Brontë experience.&nbsp;
