Meet the women shaping Bar Flora and Matador, crafting experiences where every detail speaks to their vision and care.

In the heart of Quezon City, three women decided to build something different. That decision alone said everything. Bar Flora and Matador don't compete for the loudest corner of the room. They hold their ground quietly, drawing guests into spaces where warm light and dried botanicals on the counter signal that someone thought carefully about your comfort before you even walked in. Those people are Charlene Falcis, Denise Castro, and Louiza Juano.
For Falcis, the journey began with food. &ldquo;Food was really my first business, so that was like 20 years ago,&rdquo; she says. During the pandemic, she realized Quezon City deserved spaces as thoughtful and vibrant as those in Makati or BGC. Juano, after more than a decade in Singapore, discovered her passion for creating environments that foster connection. &ldquo;I was supposed to stay for two years, but I enjoyed it a lot,&rdquo; she recalls. Castro, with a background in marketing and brand building, had long loved cooking and baking and considers herself a "huge foodie." Transforming her former office floor into a bar allowed her to engage with a &ldquo;living, breathing space that can really talk and answer to the right consumer.&rdquo;

Their paths had crossed before&mdash;Falcis had worked with Castro on a food brand and met Juano in Singapore. What started as a casual conversation over drinks quickly became a plan. Juano laughs at the memory: after discussing the idea, she resigned and returned to Manila. With complementary skills and shared vision, the trio set out to make hospitality personal, intentional, and inclusive.
For them, authenticity is everything. Falcis sees hospitality as part of who she is, visible even in small moments like plating a dish at a family dinner. Juano emphasizes that people can sense genuineness, which draws them back. Castro ensures that every detail feels purposeful and heartfelt.

This philosophy shapes both Bar Flora and Matador. Bar Flora, with botanical accents and an intimate setting, caters largely to women&mdash;a place to unwind, chat, and feel at home. Non-drinkers aren&rsquo;t left out: tea-tails, their playful take on mocktails, deliver the same excitement as cocktails. Matador blends casual comfort with curated wine and sake options, welcoming both enthusiasts and newcomers. Castro curates playlists to set the energy, while Falcis builds strong team relationships to ensure care naturally reaches every guest.

Launching thoughtful spaces wasn&rsquo;t without its challenges. Choosing Quezon City, for instance, raised questions. &ldquo;You wouldn&rsquo;t really think of QC when you think of bars or nice places to drink,&rdquo; Castro says. Yet the team recognized an opportunity in a residential neighborhood filled with schools, malls, and a curious, underserved crowd&mdash;a place that had been overlooked by other hospitality ventures. At the same time, Juano faced her own personal uncertainty: returning to Manila after more than a decade meant starting from scratch. &ldquo;I went back to zero,&rdquo; she recalls. &ldquo;But after three months, it already felt like I&rsquo;d been here for years.&rdquo;

This willingness to embrace uncertainty shaped not only their location choice but also how they designed their menus. Matador, for example, could have catered to connoisseurs with formal wine lists. Still, the team prioritized approachability instead: sangria, wine- and sake-based cocktails, and set menus that gradually introduced guests to new flavors. &ldquo;People might come in not knowing what to order,&rdquo; Juano explains&mdash;so the menu was designed to guide guests rather than intimidate.
Along the way, the three also learned to trust their instincts and expertise. This focus on reading and responding to guests&rsquo; needs became a personal lesson for all three. Castro reflects, &ldquo;I didn&rsquo;t think I could build a brand for an F&amp;B place. But it&rsquo;s similar to beauty&mdash;you need to know your customer and be confident in your brand.&rdquo; Falcis emphasizes letting each team member lead in the area they know best: &ldquo;Flora is not my market because I&rsquo;m older. That&rsquo;s Denise&rsquo;s market. And with wine, Louiza knows better.&rdquo; By leaning on each other&rsquo;s strengths, they created spaces that were authentic, welcoming, and intentional

At their core, all three agree that hospitality can&rsquo;t be performed&mdash;it must be felt. Bar Flora and Matador may serve cocktails, wine, and good food, but what they really offer goes beyond the menu. Every detail, from the way the spaces are arranged to the carefully chosen playlists, reflects the trio&rsquo;s thoughtfulness and care. Guests leave not just satisfied, but with the sense that someone anticipated their needs, noticed their presence, and created an experience just for them. It is this intentionality and authenticity that keep people coming back.
